St. Patrick’s day recipe
Ingredients:
Cheddar Cheese
English Muffins
To make one, slice a green pepper crosswise near the pointed end to get a small, three-lobed shamrock shape. (If your pepper has four lobes, you've got a lucky clover instead.) Cut a small slice for a stem.
Toast half an English muffin, then top it with a slice of Cheddar and the pepper shamrock. Place the muffin on a tray, then broil it in a toaster oven until the cheese is melted.

Baked Cauliflower Recipe
Ohh I wish I had some Cauliflower right now...this looks yummy. I already have a head of Cauliflower on the shopping list for tomorrow. Mouth watering. mmm.
Baked Cauliflower Recipe
Oven Roasted Cauliflower Ingredients:- head of cauliflower
- 1/2 cup mayonnaise
- 1/2 cup spicy brown mustard
- shredded cheese (I used cheddar)about 2 cups
Directions:
Wash cauliflower and steam entire head in microwave. I did mine about 8 minutes on high, and it was al dente. If you want it super tender maybe try 9-10 minutes.

Oven Baked Eggless Zucchini Fries
Ingredients
3 zucchini (1 lb.)
1/4 cup Grated Parmesan Cheese
1 packet Shake & Bake Coating Mix
1 small egg
Method
Heat oven to 450ºF.
Trim the zucchini -cut crosswise in half, then cut each piece into 1/4-inch sticks. Add cheese to coating mix in shaker bag; shake gently to combine.
Whisk egg in medium bowl. Add zucchini; toss to coat. Use tongs to place 1/4 of the zucchini in shaker bag; close bag and shake to evenly coat. Spread onto baking sheet sprayed with cooking spray. Repeat with remaining zucchini.
Bake for 12 to 13 min. or until golden brown, turning the baking tray 180 degrees after 7 min to facilitate even baking. Meanwhile, mix remaining ingredients.
Remove the baked fries from the oven, and serve them with your favorite dipping sauce, like this Jalapeno-Corn-Paneer Dip

Quick and Easy Rice Pudding
I love the google search bar when I am in need of a recipe. I just type in what I want and a million "Quick and Easy Rice Pudding" recipes pop up. First one I saw with the ingredients I had I printed it and started cooking.
Autumn enjoyed a couple bites of the pudding and decided that she had enough and wanted to go have some milk with Dad so I was ok with it. And I then finished her bowl I was feeding her.
Here is the recipe from cooks recipes.com
Quick and Easy Rice Pudding3 cups cooked rice
3 cups 2% milk..(I used 1% and turned out fine)
1/2 cup granulated sugar
1/4 teaspoon salt (optional)
2 tablespoons butter or margarine
1 teaspoon vanilla extract
Combine rice, milk, sugar, salt and butter in saucepan. Cook over medium heat until thickened, 25 to 30 minutes, stirring often. Add vanilla. Pour into serving dishes. Serve warm or cold.
Makes 6 servings.

German Pancakes
Matt and I love to make German Pancakes on the weekends. We follow his Moms recipe and it has been really hard for us to get the puff on the pancake to get puffy. So, it has been a great couple weeks since I kinda figured out how to get the puff. I hate to admit it but I have to add more butter than what the recipe calls for. And don't forget the salt.
